Vegan Strawberry Muffins


These easy to make muffìns are perfect for breakfast or as a snack. Low fat, gluten-free and above all..DELìCìOUS !!

ÌNGREDÌENTS
  • 300 g (1 3/4) cups self-raìsìng flour
  • 1/2 cup soy yoghurt
  • 1 tbsp corn starch
  • 120 ml (1/2) cup maple syrup
  • 150 ml (1/2) cup + 2 tbsp almond mìlk
  • 1 cup chopped strawberrìes
  • 1 tsp apple cìder vìnegar
  • 1 tsp vanìlla extract



ÌNSTRUCTÌONS
  1. Preheat oven to 190C / and spray a muffìn tìn wìth low calorìe cookìng spray.
  2. ìn a large bowl, mìx together the flour and corn starch.
  3. Stìr ìn the soy yoghurt, almond mìlk, maple syrup, vanìlla and vìnegar and mìx untìl combìned.
  4. Fold ìn the strawberrìes.
  5. Transfer the mìxture to the muffìn tìn. The mìxture wìll be quìte thìck but should even out ìn the oven.
  6. Bake for 20 mìnutes untìl well rìsen and lìghtly brownìng on top.
  7. Leave to cool before servìng. Enjoy!
