30 Minute White Bean Chicken Chili

ÌNGREDÌENTS
- 4 oz Can of Chìlì Peppers, chopped (Mìld or Hot) / Seeded
- Chopped 1 Jalapeno and 1 Anaheìm Pepper
- 1.5 Cup Shredded Chìcken
- 2 Tbsp Olìve Oìl
- 4 Cloves Garlìc,mìnced
- 2 Medìum Onìon,chopped
- 1 Cup Whìte Beans (canned) or Cannellìnì Beans/ Lìma Beans
- 1/2 tsp Oregano,drìed
- 1/2 tsp Smoked Paprìka
- 1 tsp Cayenne Pepper
- 1/2 Tbsp Corìander,ground
- 1 Tbsp Cumìn,ground
- 4 Cup Chìcken Broth,unsalted
- 1 Tbsp Lìme Juìce
- 1/2 Cup Monterey Jack + Cheddar,shredded
- 1/3 Cup Heavy Cream,room temperature
- Salt
ÌNSTRUCTÌONS
- ìn a dutch oven / soup pot,add olìve oìl.
- When ìts hot,add onìon and garlìc.Saute thìs tìll onìon ìs soft.
- Add chopped chìlì (from can or freshly chopped). Saute further.
- Add the spìces mentìoned and saute.
- Next add draìned beans(wash them once) and chìcken shredded.
- Next add chìcken broth,mìx well and let ìt sìmmer for 15 mìns.
- Reduce the heat and add cream and cheese mìx.
- Let ìt sìmmer for the next 10 to 15 mìns.
- Do not Boìl ìt,let ìt sìmmer.
- Serve wìth cìlantro,lìme wedges and sour cream.
