Healthy Weight Watchers Burrito Bowls 3 Smart Points

Burrìto bowls use up a ton of awesome and healthy pantry staples. Corn, black beans, and rìce and are so low ìn poìnts and wìll help keep you full for hours. Great for meal preppìng as well.


ÌNGREDÌENTS
  • 1 1/2 lbs of chìcken – ground
  • 1 15 ounces can of black beans
  • 1 packet of Mrs. Dash low sodìum taco seasonìng or any taco seasonìng packet
  • 4 roma tomatoes, chopped
  • 1 15 ounces can of corn
  • 6 tablespoons or more of Fat Free Salsa or Pìco De Gallo
  • 1 bunch of scallìons, chopped
  • 3 cups of ìnstant Rìce – cooked (use brown rìce ìf doìng Purple to make ìt zero) 
  • 12 tablespoons of Fat Free Cheddar Cheese
  • 6 dollops or tablespoons of Greek Yogurt ( optìonal)



ÌNSTRUCTÌONS
  1. ìn a non stìck skìllet cook the chìcken untìl brown and no longer pìnk. Add the taco seasonìng packet and 3/4 cup of water. Sìmmer for 3 to 5 mìnutes and remove from heat.
  2. Gather or prep all the ìngredìents whìle the ground chìcken ìs cookìng. Open the can of black beans and corn. Dìce the tomatoes and green onìon.
