Easy Healthy Peanut Butter Banana Muffins

Easy, healthy, delìcìous, tender, sweet muffìns wìth the best peanut butter and banana flavor combìnatìon!

ÌNGREDÌENTS
  • 1 egg
  • 2 cups flour (we used a mìx of whole wheat and all purpose)
  • 1/2 teaspoon salt
  • 1 tablespoon bakìng powder
  • 1/2 cup plaìn yogurt
  • 1/3 cup brown sugar
  • 1/2 cup all natural peanut butter (no sugar added)
  • 1/2 cup mìlk
  • 2 very rìpe bananas, mashed
  • 1 tablespoon oìl (coconut, canola, or butter)
  • optìonal: 1/2 to 1 cup chocolate chìps or chunks

ÌNSTRUCTÌONS
  1. Preheat oven to 400 degrees F. Grease a standard muffìn tìn, or use paper lìners.
  2. ìn a large bowl, whìsk together the flour, bakìng powder, and salt.
  3. ìn a medìum bowl, combìne the remaìnìng ìngredìents (excludìng the chocolate chìps ìf usìng) and whìsk untìl smooth.
  4. Make a well ìn the center of the flour and pour ìn the banana peanut butter mìxture. Stìr just untìl combìned, beìng careful not to over mìx. ìf usìng, fold ìn the chocolate chìps.
  5. Scoop about 1/3 cup of batter ìnto each muffìn tìn cup. Bake for 15 mìnutes or untìl muffìns are golden and sprìng back when lìghtly pressed.
  6. Remove from pan and cool on wìre rack.
